Our Story

In October 2022, after fifteen years of successfully operating restaurants in Granada Nicaragua, Damien Hopkins and Xiomara Díaz introduced NM Culinary Granada, a farm to table dining experience highlighting local flavors and drawing inspiration from local traditions.

NM is the abbreviation of Numu, which in the Chorotega indigenous language means sun.  Our name reflects the restaurant's rhythm with nature and the bounty of its seasons. Our ethos is to make delicious food with the best local ingredients.  While dishes change throughout the year, a few of the favorite menu staples remain consistent.  

The restaurant is located in the open courtyard of a rustic and charming Spanish colonial style house in the heart of Granada’s 500 year old historic center. 

Just like other efforts by Damien and Xiomara, the NM experience is delivered from a place of purpose, with a strong commitment to our team, the Granada community and environment.
